This delightful treat has become my favorite breakfast. I got the idea from the popular local hangout, “Gypsy Den.” They make a similar parfait but it’s a little more complex than this one. I decided to name this the ‘Gypsy Mama Parfait’ because oats are beneficial for increasing milk supply. If you wanted to really make this a lactation booster, add brewer’s yeast and walnuts. Prepare this the night before so that the oats have time to soak. Here it is, just four ingredients to breakfast bliss:
Gypsy Mama Parfait
3/4 Cup Rolled Oats
1 Cup Greek Yogurt
1 TBL Honey
2 TBL Almond Butter
(Optional Additions: Berries, Bananas and/or Nuts)
Prepare this the night before you wish to eat it so that the oats have time to soak.
Use a tall drinking glass.
Step 1. Put 1/4 Cup Greek Yogurt then 1/4 Cup Oats (this is to ensure the bottom layer of oats become moist)
Step 2. Layer 1/4 Cup Yogurt, 1/4 Cup Oats, then 1/4 Cup Yogurt, then 1 TBL Almond Butter, then 1/2 TBL Honey
Step 3. Repeat Step 2
Step 4. Cover glass and put in refrigerator to soak over night.
